What you’ll be needing:
- Zucchini – 1 piece.
- Eggplant – 1 piece.
- Bellpepper – 1 piece.
- Carrot – 1 piece.
- Onion – 1 piece.
- Garlic – As per taste.
- Tomatoes – 3 pieces.
- Lasagna Leaves.
- Pepper – as per taste.
- Mozzarella Cheese – 100 gram.
- Basil Fresh – few leaves.
- Olive Oil – 1 tsp.
- Tomato Paste – 1.5 tbsp.
- Salt – as per taste.
- Cottage Cheese – 150 gram.
- Water – 1 cup.

How we will be cooking this:
- Wash eggplant, zucchini, carrot, onion and bell pepper nicely and then cut them into cubes. Salt the veggies and leave them for about 5 minutes. Then Peal the tomatoes and cut them into circles. Chop the garlic and basil nicely.
- Heat up a non-stick frying pan with olive oil and start frying onion and garlic on medium fire until they turn golden and then add carrot, zucchini, eggplant and bell pepper into the mix.
- Mix these well and then cover with a lid and keep on frying for 15-20 minutes. Don’t forget to mix it after every 2-3 minutes.
- When veggies are ready and soft; add tomato paste and water and then season them with salt pepper and chopped basil. Keep on frying for 5 more minutes on low fire.
- Take a deep baking tray of medium size. Cover the bottom of baking tray with 1 layer of lasagna leaves. Then put a layer of veggies, tomatoes, cotton cheese and a little bit of mozzarella (gathered together or cut into cubes). Then repeat this entire layering process for 2-3 times. Topmost layer must be veggies and mozzarella only.
- Bake in 160 deg. C for 35 minutes.
