What you’ll be needing:

Cottage cheese – 150 gram.

Parsley – 1 bunch

Parmesan – 100 gram

Nutmeg – 1 pinch

Fresh spinach – 200 gram

Flour – 85 gram

How we will be cooking this:
- Wash and dry the fresh spinach and then put it into a pot and fill it with boiling water . In 1 minute strain through a sieve. Wrap the spinach into a clean kitchen towel and press out the excess water.
- Grate parmesan on a fine grater. Wash parsley, peel the garlic and chop nicely. You can add other greens such as basil, tarragon, thyme or cilantro but not very much, few leaves will be enough. Blend greens and spinach with garlic together.
- Take a deep bowl and pour the blended green mixure. Add sifted flour, parmesan, eggs and nutmeg. Knead the dough. Season with salt and pepper as per your taste.
- Form cheese balls with wet hands size of a walnut. Place them on a tray and put in the fridge for half and hour.
- Fill a big pot with water and a bit of salt and let it boil on a high flame. Boil the gnocchi for 1 minute after they will float to the surface but not more than 6-8 at once. Serve these with parmesan, sour cream or melted butter.
