How we will be cooking this:
- First of all, nicely wash the cauliflower and then parse it into florets. Dry the cauliflower with paper towel. Place the cauliflower florets into food processor and blend it until small rice looking pieces. You can also rub it on a grater.
- When you are finished with the cauliflower, peel onion and garlic and then chop them nicely. Preheat a non-stick frying pan with few drops of any vegetable oil. Add garlic and onion and then mix it well.
- Take one egg and then separate egg white from egg yolk. Pour this egg white into pan with frying garlic and onion. Using a wooden paddle, mix all these components. Try to break egg white into small pieces while frying.
- Now it’s time to add our cauliflower rice and mix it well. If you prefer al dente then keep on frying for 2-3 minutes and to make it nice and soft, fry for 6 minutes on a medium flame. Don’t cover our cauliflower rice with a lid while cooking, cause you will end up with liquid manure.
- When you are done with the cooking of cauliflower rice, it’s time to make things interesting and prepare vegetables that we will later mix with our cauliflower rice. For that, wash and dry the mushrooms and peel carrot. Cut vegetables into small cubes and fry on a non- stick frying pan with few drops of vegetable oil. Season with spices of your taste. Keep frying until it has light golden edges and then mix with cauliflower rice.
- Serve our healthy and tasty dish with tomatoes and lemon.
