Steamed Vegetables with orange juice and potatoes

What you’ll be needing:

  • Potatoes – 4 pieces.
  • Small Cabbage – half.
  • Onion – 1 piece.
  • Carrot – 1 piece.
  • Red Bell Pepper  – half of a piece.
  • Mushrooms – 5 pieces.
  • Zucchini – 1 piece.
  • Tomato – 1 piece.
  • Orange – 1 piece.
  • Soya Sauce – 1 tbsp.
  • Olive Oil – 1 tbsp.
  • Salt – Few pinches.
  • Pepper  – As per taste.

  

What is the nutritional value (per serving):

  • Calories­ – 120 kcal.
  • Proteins – 7 grams.
  • Fats – 8 grams.
  • Carbohydrates – 24 grams.

  

How we will be cooking this:

  • First of all, wash and peel the potatoes. Cut them into cubes and start boiling on a high flame and when you see the bubbles coming up then lower the flame. Add half of a teaspoon of salt.
  • While our potatoes are boiling; peal the zucchini, carrot, and onions. Cut zucchini, red bell pepper and carrot into thin stripes and put in a plate and sprinkle a little bit of salt. Cut onion, tomatoes, cabbage and mushrooms into big slices.
  • Heat a non-stick frying pan on medium flame and then add olive oil in it. Start frying the zucchini, onion, carrot, cabbage, mushrooms and red bell pepper; cover with a lid and leave them for about 5 minutes.
  • After that, add a pinch of salt and pepper and then mix them well and post that, add tomatoes. Cover with the lid and continue cooking for 10 more minutes on a medium flame. When veggies are soft. add soy sauce and juice of 1 orange. Cook for about 5 more minutes.
  • Serve on a flat dish with boiled potatoes on it. Enjoy your meal! Stay healthy and happy! 🙂
