Savoury Couscous with vegetables

What you’ll be needing:

  • Zucchini – 1 small piece.
  • Couscous – 1 cup.
  • Water – 1 cup.
  • Carrot – 1 small piece.
  • Eggplant – 1 small piece.
  • Garlic – 1 piece.
  • Mushrooms – 4 pieces.
  • Tomatoes – 2 medium pieces.
  • Onion – 1 piece.
  • Pepper – as per taste.
  • Red Sweet Paprika – 0.5 tsp.
  • Vegetable Oil  – 0.5 tsp.
  • Salt – as per taste.

  • Calories: 170 kcal
  • Proteins: 15 gram
  • Carbohydrates: 20 gram

  

 How we will be cooking this:

  • First cut the zucchini, eggplant, carrot, mushrooms and tomatoes into small cubes and onion into circles. Then chop the garlic nicely.
  • Take a non-stick frying pan and heat it on a medium fire. When the pan is hot, add oil and onion with  garlic. Fry until it turns golden and then add vegetables except tomatoes, salt, pepper and red sweet paprika.
  • Cover with a lid and keep on frying on a low fire for 15 minutes or more until all veggies are soft. Don’t forget to mix it every 3-4 minutes. After that add tomatoes and fry for 7 more minutes and keep on mixing.  Don’t forget to try in to know if salt is needed. If you see that veggies are dry you can add a little bit of water.
  • Take a small cooker and in it boil 1 cup of water, salt it and pour 1 cup of couscous. Then again boil it for  5 minutes on a low fire and keep on mixing. When water is dried out; turn off fire, cover with a lid and let it rest for few minutes.
  • When everything is ready, you can either mix veggies with couscous or eat it separately.
