Cooking Cold soup Okroshka ( the vegetarian option )

What you’ll be needing:

  • Potatoes – 3 pieces.
  • Cucumber – 3 pieces.
  • Dill – 100 gram.
  • Parsley – 100 gram.
  • Green Onion  – 100 gram.
  • Eggs – 3 pieces.
  • Radish – 7-10 pieces.
  • Salt – as per taste.
  • Pepper – as per taste.
  • Kefir – as per taste.
  • Lemon Juice – 2 tbsp.
  • Mineral Soda – as per taste.

  

What is the nutritional value (per serving):

  • Calories­ – 342 kcal.
  • Proteins – 5 grams.
  • Fats – 6 grams.
  • Carbohydrates – 20 grams.

  

How we will be cooking this:

  • First of all, boil the potatoes for about 20 minutes without peeling them and then the eggs for about 7-8 minutes. When eggs are boiled then put them in cold water.
  • Cut cucumbers and radish in small pieces, chop the greens nicely. Put everything in a big bowl and then mix. When potatoes are cooled down, peel them and cut them into cubes; consecutively repeat the same with eggs.
  • Add potatoes and eggs to the bowl with veggies and greens and mix them once again very well. Add salt, pepper, kefir, mineral soda and lemon juice. When everything is done, put it in the fridge for 1 hour and if you are not so hungry you can leave it in the fridge overnight to get the best result.
