How we will be cooking this:
- First of all, soak beans in water for overnight in a deep bowl. In the Morning, boil these beans in a pot for 30 minutes until beans are soft, and don’t forget to put a little bit of salt to soften the beans even more while boiling.
- While beans are boiling we can prepare our veggies. First of all finely chop the onion and garlic, and then cut red bell and tomatoes into small cubes.
- When beans are boiled and ready, peal them.
- Take a non-stick frying pan and heat it on a medium fire with olive oil. Add onion with garlic and fry until it turns golden. After that add red bell and in following 2 minutes – tomatoes, peeled beans, tomato pasta, water, red paprika salt and pepper.
- Keep on frying and mixing on a medium to low fire for about 5-7 minutes until everything is well mixed.
- Take 4 eggs and beat into a bowl, make sure there is no shells left inside the bowl.
- Pour the eggs one by one over our fried beans with veggies and cover with the lid. Cook for about 5 -8 minutes on medium fire until eggs are ready. I advise to keep on checking because eggs might cook faster.
- When everything is ready you can sprinkle our ful midamess with lemon juice or lime juice. It can be eaten with any veggie salad or veggies of your choice.
- Enjoy your meal! 😀 Stay healthy and happy!!
